BUTTER
The good butter is better than its reputation. It has fallen into disrepute because of its relatively high cholesterol content, and amount of saturated fats but our body also needs that. A small amount is ok. It gives cakes and biscuits a great taste and the necessary firmness for baking. Butter is more difficult to digest than vegetable oils or ghee. This is the clarified butter, which is freed of proteins through long cooking. Ghee and butter are valuable foods. They are a thousand times healthier than margarine, which is made from processed vegetable oils and water. Our body can’t digest this artificial mix completely.
Story: Butter was already consumed in antique times all over the world from cows, goats, buffalos or yaks
Properties: very nutritious, cold, heavy and difficult to digest
Ingredients: contains a lot of vitamins A, D and E as well as B vitamins, minerals and trace elements. Whatever the animal got to eat you will find in the butter
Effects: increases Kapha. Has a nourishing, cooling and greasy effect
Use: for roasting, baking and cooking and pure on vegetables or bread in small quantities
GHEE
Story: clarified butter is known under different names all over the world. By boiling the butter for a long time, the milk fat is separated from the milk protein (whey)
Properties: nutritious, cooling and oily
Effects: reduces Pitta and Vata, increases Kapha. Ghee has a greasy effect on the tissue, is deacidifying, stimulating metabolism and digestion, is anti-inflammatory and detoxifying. The short-chain fatty acids in ghee penetrate deep into the tissue and right down to the cells, especially nerves and skin. They activate the metabolism and bind toxins. This is why medicated ghee, which is cooked with bitter herbs for many days, is used for detoxification in an ayurvedic cleansing cure. It activates mitochondria and is ideal for burning fat if you are overweight
Use: best from organic sweet butter
BUTTER
