Artichokes are extremely good for the liver. The bitter substances like Cynarin, Flavonoides and Polyphenole are stimulating the production of bile in the liver. This way the liver is cleansed and the digestion is activated. Just cut the stem and boil it with Ghee, salt and water. The tip of the leaf gets very soft. You can eat it with vegan vegetable dips or Aioli.
